Faux Potato Skins
INGREDIENTS
2 10 oz. Bags of Riced Cauliflower
1 Egg
1/4 cup Melted Butter
1/2 cup Grated Parmesan Cheese
Pink salt
Pepper
Shredded Cheddar Cheeese
Bacon Bits
Instructions:
Cook, drain and pat dry cauliflower rice.
Mix cauliflower rice, egg, 1/2 cup of grated parmesan cheese and butter together in mixing bowl.
Spoon into muffin pan.
Bake at 350 for 25 mins.
Remove from oven.
Top with shredded cheese and bacon bits.
Bake an additional 5 minutes.
Remove from oven and ENJOY!!
**I garnished with chives and served with sour cream.
