Ingredients:

  • 1 cup heavy whipping cream
  • 4 oz cream cheese, softened
  • ¼ cup powdered erythritol or other keto-friendly sweetener (adjust to taste)
  • 1 teaspoon vanilla extract (or flavor of choice like almond or coconut)
  • 1 tablespoon coconut oil or MCT oil (for extra healthy fats)
  • 2 tablespoons unsweetened cocoa powder (optional, for chocolate flavor)
  • A pinch of salt (to balance the sweetness)
  • Optional add-ins: crushed nuts, unsweetened shredded coconut, or a few chocolate chips (sugar-free)

Instructions:

1. Whip the Cream:

  • In a large bowl, use a hand mixer or stand mixer to whip the heavy whipping cream until stiff peaks form. This will take about 2-3 minutes on medium speed. Set it aside.

2. Prepare the Fatbomb Fluff Base:

  • In a separate bowl, beat the softened cream cheese until smooth.
  • Add the powdered erythritol, vanilla extract (or your chosen flavor), and a pinch of salt to the cream cheese, and mix until fully combined.
  • If you’re making a chocolate version, add the unsweetened cocoa powder to the mixture and mix well.
  • Add the coconut oil (or MCT oil) to the cream cheese mixture and beat until everything is incorporated. The coconut oil will help add healthy fats and a smooth texture to the fluff.

3. Fold Everything Together:

  • Gently fold the whipped cream into the cream cheese mixture using a spatula. Be careful not to deflate the whipped cream too much—this step gives the fluff its light and airy texture.

4. Chill the Fatbomb Fluff:

  • Once everything is combined, transfer the fluff into a bowl or individual serving cups.
  • Chill in the refrigerator for at least 1-2 hours to allow it to set and firm up.

5. Serve:

  • After chilling, the fatbomb fluff will be nice and firm, and you can top it with optional add-ins like crushed nuts, a sprinkle of shredded coconut, or a few sugar-free chocolate chips.
  • Serve it as a sweet treat, snack, or dessert!

Tips & Variations:

  • Flavor Variations: Add different flavor extracts like almond, coconut, or lemon to create different varieties of fluff.
  • Add Texture: If you like some crunch, mix in crushed nuts (like almonds or pecans), or a spoonful of nut butter.
  • Make it Fruit-Flavored: For a fruit-flavored fluff, add a couple of tablespoons of freeze-dried strawberries, raspberries, or blueberries.
  • Sweetness Adjustments: You can adjust the sweetness level by adding more or less sweetener to suit your taste.
