Egg White Muffins with Veggies

Ingredients:

6 egg whites

Chopped spinach

Chopped bell peppers, mushrooms, or onions

Salt and pepper

Nonstick spray or muffin liners

Instructions:

1. Preheat Oven: 375°F (190°C).

2. Prepare Mix:

In a bowl, whisk egg whites with chopped vegetables.

Season with salt and pepper.

3. Bake:

Spray muffin tin or use silicone liners.

Pour egg white mixture into muffin cups (fill 3/4 full).

Bake for 15–20 minutes until set and slightly golden.

4. Serve: Great for meal prep and reheating!
