Egg salad sanwiches
Ingredients:
- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/4 cup finely chopped celery
- 2 tablespoons finely chopped red onion
- Salt and pepper to taste
- Bread or rolls for sandwiches
- Lettuce leaves (optional)
- Tomato slices (optional)
- Pickles (optional)
Instructions:
- Hard-Boil the Eggs:
- Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat to low and simmer for about 10-12 minutes.
- Once cooked, transfer the eggs to an ice bath to cool quickly. Peel the eggs and chop them.
- Prepare the Egg Salad:
- In a bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, chopped celery, and chopped red onion.
- Mix the ingredients until well combined. Add salt and pepper to taste. Adjust the mayo and mustard amounts according to your preference.
- Assemble the Sandwiches:
- If desired, lightly toast the bread or rolls.
- Place a generous scoop of the egg salad onto one side of the bread or roll.
- Optional Additions:
- Add lettuce leaves, tomato slices, or pickles to enhance the flavor and texture of the sandwich.
- Serve:
- Top with the other half of the bread or roll to create a sandwich.
- Cut the sandwiches in half if desired, and serve immediately.
Notes:
- Customize the egg salad by adding fresh herbs like chopped dill or parsley.
- Experiment with different types of bread, such as whole wheat, rye, or a crusty baguette.
- If you like a creamier texture, add a bit more mayonnaise.
