Egg salad sanwiches

Ingredients:

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • Salt and pepper to taste
  • Bread or rolls for sandwiches
  • Lettuce leaves (optional)
  • Tomato slices (optional)
  • Pickles (optional)

Instructions:

  1. Hard-Boil the Eggs:
    • Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat to low and simmer for about 10-12 minutes.
    • Once cooked, transfer the eggs to an ice bath to cool quickly. Peel the eggs and chop them.
  2. Prepare the Egg Salad:
    • In a bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, chopped celery, and chopped red onion.
    • Mix the ingredients until well combined. Add salt and pepper to taste. Adjust the mayo and mustard amounts according to your preference.
  3. Assemble the Sandwiches:
    • If desired, lightly toast the bread or rolls.
    • Place a generous scoop of the egg salad onto one side of the bread or roll.
  4. Optional Additions:
    • Add lettuce leaves, tomato slices, or pickles to enhance the flavor and texture of the sandwich.
  5. Serve:
    • Top with the other half of the bread or roll to create a sandwich.
    • Cut the sandwiches in half if desired, and serve immediately.

Notes:

  • Customize the egg salad by adding fresh herbs like chopped dill or parsley.
  • Experiment with different types of bread, such as whole wheat, rye, or a crusty baguette.
  • If you like a creamier texture, add a bit more mayonnaise.
