Egg Roll in a Bowl (Keto)

Ingredients:

  • 1 lb ground pork (or ground beef, turkey, or chicken)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 bag coleslaw mix (shredded cabbage and carrots, about 14 oz)
  • 1 tbsp soy sauce (or coconut aminos for a soy-free option)
  • 1 tbsp sesame oil
  • 2 tbsp green onions, chopped
  • 1 tbsp sesame seeds (optional, for garnish)
  • Salt and pepper to taste
  • Sriracha or hot sauce (optional, for serving)

Instructions:

  1. Cook the Meat:
    • In a large skillet or wok, brown the ground pork over medium-high heat until fully cooked. Break it apart with a spatula as it cooks.
  2. Add Aromatics:
    • Add the chopped onion, minced garlic, and grated ginger to the skillet. Cook for 2-3 minutes until the onion becomes translucent and fragrant.
  3. Add Coleslaw Mix:
    • Stir in the coleslaw mix. Cook for about 5-7 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
  4. Season:
    • Pour in the soy sauce and sesame oil. Stir well to combine all the ingredients. Season with salt and pepper to taste.
  5. Garnish and Serve:
    • Remove from heat and sprinkle with chopped green onions and sesame seeds. Serve hot with a drizzle of sriracha or hot sauce if desired.
