Egg Roll in a Bowl (Keto)

Ingredients:
- 1 lb ground pork (or ground beef, turkey, or chicken)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 bag coleslaw mix (shredded cabbage and carrots, about 14 oz)
- 1 tbsp soy sauce (or coconut aminos for a soy-free option)
- 1 tbsp sesame oil
- 2 tbsp green onions, chopped
- 1 tbsp sesame seeds (optional, for garnish)
- Salt and pepper to taste
- Sriracha or hot sauce (optional, for serving)
Instructions:
- Cook the Meat:
- In a large skillet or wok, brown the ground pork over medium-high heat until fully cooked. Break it apart with a spatula as it cooks.
- Add Aromatics:
- Add the chopped onion, minced garlic, and grated ginger to the skillet. Cook for 2-3 minutes until the onion becomes translucent and fragrant.
- Add Coleslaw Mix:
- Stir in the coleslaw mix. Cook for about 5-7 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
- Season:
- Pour in the soy sauce and sesame oil. Stir well to combine all the ingredients. Season with salt and pepper to taste.
- Garnish and Serve:
- Remove from heat and sprinkle with chopped green onions and sesame seeds. Serve hot with a drizzle of sriracha or hot sauce if desired.
