Ingredients

Dry Ingredients

  • 1½ cups almond flour
  • 3 tablespoons coconut flour

  • ¼ teaspoon baking soda
  • ½ teaspoon salt

  • ¾ cup unsweetened almond milk (or other plant milk)
  • ¼ cup olive oil or melted coconut oil
  • ¼ cup erythritol or preferred keto sweetener
  • ½ cup fresh orange juice (about 1 large orange)
  • Zest of 1 orange
  • 1 teaspoon vanilla extract

Optional Topping

  • 2–3 tablespoons powdered erythritol (for dusting)
  • Sugar-free whipped cream or cream cheese frosting

Step 1: Preheat & Prep

  1. Preheat oven to 175°C (350°F).
  2. Grease an 8-inch round cake pan and line with parchment paper.

Step 2: Mix Dry Ingredients

  1. In a large bowl, combine almond flour, coconut flour, flaxseed, baking powder, baking soda, and salt.
  2. Mix thoroughly to avoid lumps.

Step 3: Mix Wet Ingredients

  1. In another bowl, whisk almond milk, oil, erythritol, orange juice, orange zest, and vanilla extract.
  2. Make sure the sweetener is mostly dissolved.

Step 4: Combine & Fold

  1. Gradually pour wet ingredients into dry ingredients.
  2. Fold gently until smooth. Do not overmix—overmixing can make the cake dense.
  3. The batter will be slightly thick but pourable.

Step 5: Bake

  1. Pour batter into prepared pan. Smooth the top.
  2. Bake for 25–30 minutes, or until a toothpick comes out clean.
  3. Let cake cool in pan for 10 minutes, then transfer to a wire rack.
