Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can chickpeas, drained & rinsed
- 1 can diced tomatoes
- 1 can coconut milk
- 2 cups spinach or kale
- 2 tsp curry powder
- 1 tsp cumin
- 1 tsp paprika
- Salt & pepper, to taste
- Optional: 1 tbsp lemon juice
- Optional toppings: cilantro, avocado, lime wedges
Instructions
- Heat oil in a pot over medium heat.
- SautΓ© onion until soft (3β4 min).
- Add garlic + ginger and cook 1 minute.
- Add spices and stir for 30 seconds.
- Add chickpeas, tomatoes, and coconut milk.
- Simmer 10β15 minutes.
- Add spinach and cook 2β3 minutes until wilted.
- Season with salt, pepper, and lemon juice.
