🌱 Easy Vegan Chickpea Curry (One-Pot)

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can chickpeas, drained & rinsed
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 2 cups spinach or kale
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt & pepper, to taste
  • Optional: 1 tbsp lemon juice
  • Optional toppings: cilantro, avocado, lime wedges

Instructions

  1. Heat oil in a pot over medium heat.
  2. SautΓ© onion until soft (3–4 min).
  3. Add garlic + ginger and cook 1 minute.
  4. Add spices and stir for 30 seconds.
  5. Add chickpeas, tomatoes, and coconut milk.
  6. Simmer 10–15 minutes.
  7. Add spinach and cook 2–3 minutes until wilted.
  8. Season with salt, pepper, and lemon juice.
