Easy Diabetic Omelet Bites

🧾 Ingredients (makes ~6–8 bites)

  • 4 large eggs
  • 2 tbsp milk (or unsweetened almond milk)
  • ¼ cup chopped spinach
  • ¼ cup diced bell peppers
  • 2 tbsp chopped onions
  • ¼ cup mushrooms (optional)
  • ¼ cup shredded cheese (cheddar or mozzarella)
  • Salt & black pepper (to taste)
  • Pinch of turmeric or chili flakes (optional)

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F)
  2. Lightly grease a muffin tray
  3. In a bowl, whisk eggs + milk + seasoning
  4. Add all vegetables and mix well
  5. Pour mixture evenly into muffin cups
  6. Sprinkle cheese on top
  7. Bake for 15–20 minutes until set
  8. Let cool slightly and remove

🍽️ Serving Tips

  • Eat 2–3 bites with a side of cucumber or avocado
  • Great for breakfast or snack
  • Can be stored in fridge for 3 days
