Easy No-Knead Bread (Soft, Fluffy, and Budget-Friendly)

Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup ground flaxseed
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 5 large eggs
  • 1/2 cup unsalted butter, melted (or olive oil)
  • 1/2 cup unsweetened almond milk
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat oven to 175°C (350°F). Line a loaf pan with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk almond flour, coconut flour, flaxseed, baking powder, and salt.
  3. Mix wet ingredients: In another bowl, whisk eggs, melted butter, almond milk, and apple cider vinegar.
  4. Combine: Pour wet ingredients into dry, stirring until you have a thick batter.
    • No kneading required — just mix until smooth.
  5. Bake: Pour batter into loaf pan. Bake for 45–50 minutes, or until golden brown and a toothpick comes out clean.
  6. Cool completely before slicing to keep it fluffy inside.

Storage Tip: Wrap tightly and store in the fridge for up to 5 days, or freeze slices for later.
