EASY KETO CHICKEN BACON RANCH CASSEROLE

Ingredients

  • 3 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 6 slices cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese, softened
  • 1/2 cup ranch dressing (check label for low-carb)
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 2 Tbsp chopped green onions or chives (optional)

🥣 Instructions

1️⃣ Prep Oven

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9×9” or similar casserole dish.

2️⃣ Mix the Creamy Base

  • In a large bowl, combine:
    • Softened cream cheese
    • Ranch dressing
    • Heavy cream
    • Garlic powder
    • Onion powder
    • Black pepper
  • Stir until smooth and creamy.

3️⃣ Add Chicken and Cheese

  • Stir in:
    • Shredded chicken
    • Half the cooked bacon
    • Half the cheddar and mozzarella

4️⃣ Assemble

  • Spread the mixture evenly into the prepared baking dish.
  • Sprinkle remaining cheddar, mozzarella, and Parmesan on top.

5️⃣ Bake

  • Bake 20–25 minutes until hot and bubbly.

6️⃣ Finish

  • Remove from oven.
  • Top with the remaining bacon.
  • Sprinkle chopped green onions or chives.

7️⃣ Serve

Enjoy warm—great with:

  • A side salad
  • Steamed broccoli or zucchini noodles

  • Refrigerate up to 4 days.
  • Freeze in portions up to 2 months.
