Easy Homemade Broccoli Salad Recipe

Ingredients:

  • 4 cups fresh broccoli florets
  • 1 cup cooked bacon, crumbled (optional for a keto version)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds or nuts (like almonds or pecans)
  • 1/4 cup dried cranberries or raisins
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or a keto-friendly sweetener (adjust to taste)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Broccoli:
    • Blanch the broccoli florets in boiling water for 1-2 minutes, then transfer them to an ice bath to stop the cooking process. Drain well and pat dry with a paper towel.
  2. Mix the Salad:
    • In a large bowl, combine the broccoli florets, crumbled bacon (if using), red onion, cheddar cheese, sunflower seeds, and dried cranberries or raisins.
  3. Make the Dressing:
    • In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey or sweetener, salt, and pepper.
  4. Combine and Chill:
    • Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
  5. Chill:
    • Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  6. Serve:
    • Give the salad a final toss before serving. Enjoy!
