Easy Homemade Broccoli Salad Recipe

Ingredients:
- 4 cups fresh broccoli florets
- 1 cup cooked bacon, crumbled (optional for a keto version)
- 1/2 cup red onion, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup sunflower seeds or nuts (like almonds or pecans)
- 1/4 cup dried cranberries or raisins
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or a keto-friendly sweetener (adjust to taste)
- Salt and pepper to taste
Instructions:
- Prepare the Broccoli:
- Blanch the broccoli florets in boiling water for 1-2 minutes, then transfer them to an ice bath to stop the cooking process. Drain well and pat dry with a paper towel.
- Mix the Salad:
- In a large bowl, combine the broccoli florets, crumbled bacon (if using), red onion, cheddar cheese, sunflower seeds, and dried cranberries or raisins.
- Make the Dressing:
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey or sweetener, salt, and pepper.
- Combine and Chill:
- Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
- Chill:
- Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld.
