Easy Energy Bars


INGREDIENTS

  • 6 or 7 pitted medjool dates, chopped
  • 1/2 cup raw cashews
  • 1/2 cup quick oats
  • 1/8 cup maple syrup
  • 1/8 cup hemp seeds
  • 1/8 cup chia seeds
  • peanut butter, walnuts, and chocolate for layering on top
    INSTRUCTIONS
    Blend all ingredients together except for the topping ingredients in a processor until a thick batter is formed. Line a small pan with parchment paper, and spread the mixture evenly. Freeze for one hour. Remove from the freezer, and layer the peanut butter, walnuts, chocolate, and/or whatever other topping you choose! Freeze for an additional hour.
    This was so easy to do and can really be customized however you want. Just use what you have! If storing in the fridge, layer between parchment paper.
