- 2 tablespoons vegetable oil
- 1/4 cup chicken broth or water
Instructions:
Preparing the Dumpling Wrappers:
- Make the Dough: In a large bowl, mix the flour and salt. Slowly add warm water, stirring with a wooden spoon until the dough comes together. If the dough is too dry, add a little more water, one tablespoon at a time.
- Knead the Dough: Turn the dough onto a floured surface and knead until smooth and elastic, about 5-7 minutes. Cover with a damp cloth and let it rest for at least 30 minutes.
- Roll the Dough: Divide the dough into small portions (about 1 inch in diameter). Roll each portion into a ball and then flatten it with your palm. Using a rolling pin, roll each piece into a thin, round wrapper about 3-4 inches in diameter.
Preparing the Filling:
- Mix the Filling: In a large bowl, combine the chopped shrimp, chives, ginger, garlic, soy sauce, sesame oil, cornstarch, white pepper, and salt. Mix well until all ingredients are evenly distributed.
Assembling the Dumplings:
- Fill the Dumplings: Place about a teaspoon of the filling in the center of each wrapper. Fold the wrapper in half to form a half-moon shape and pinch the edges together to seal. You can pleat the edges for a decorative look if desired.
Baking the Dumplings:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Baking Dish: Grease a baking dish with vegetable oil. Arrange the dumplings in the dish, making sure they are not touching.
- Bake the Dumplings: Pour the chicken broth or water into the baking dish around the dumplings. Cover the dish with foil.
- Bake: Bake for 15-20 minutes. Remove the foil and bake for an additional 5-7 minutes until the dumplings are golden brown and crispy on top.
