Double Chocolate Chip Muffins
Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (semi-sweet or dark)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.
- Combine Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Add Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the batter.
- Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake: Bake in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
- Cool: Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
- Serve: Once cooled, serve and enjoy your double chocolate chip muffins!
