DOUBLE BERRY LEMON MUFFINS – -Two Points Each On Weight Watchers Green
1/3 cup oatmeal
- 1-1/2 cups all purpose flour
- 2 Tbl sugar substitute
- 2 tsp baking powder
Sift dry ingredients into a mixing bowl. Add and mix well: - 1/2 cup unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 1 egg
- Zest of one lemon
- Juice of one lemon
Directions:
Preheat oven to 350° and spray muffin tin or silicone muffin cups.
Fold in 2/3 cup each frozen or fresh raspberries and blueberries. Evenly distribute better among 12 muffin cups. Bake 25-30 minutes. Cool 5-10 minutes before unmolding. Cool completely on wire rack. Store in fridge.
