🛒 Ingredients (Makes 8 rolls)
Dry Ingredients
- 2 cups almond flour
- ⅓ cup coconut flour
- 1 tbsp baking powder
- ½ tsp xanthan gum (important for softness)
- Pinch salt
Wet Ingredients
- 3 large eggs
- ⅓ cup melted butter
- ½ cup warm unsweetened almond milk
- 2 tbsp powdered monk fruit sweetener
- 1 tsp apple cider vinegar
For Golden Top
- 1 egg yolk + 1 tbsp almond milk (egg wash)
🥣 Instructions
1️⃣ Preheat
- Oven to 350°F (175°C).
- Line baking sheet with parchment paper.
2️⃣ Mix Dry
Whisk almond flour, coconut flour, baking powder, xanthan gum, and salt.
3️⃣ Mix Wet
Whisk eggs, melted butter, almond milk, sweetener, and vinegar.
4️⃣ Combine
- Mix wet into dry.
- Dough will be soft but scoopable.
- Let sit 3–4 minutes to thicken.
5️⃣ Shape
- Divide into 8 rolls.
- Slightly wet hands to smooth tops.
