Diabetic-Friendly Peach Cobbler
Ingredients
Filling:
- 4 cups fresh or frozen peaches (unsweetened)
- 2–3 tbsp sweetener (like stevia, monk fruit, or erythritol)
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tbsp cornstarch (or arrowroot for thickening)
Topping:
- 1 cup almond flour
- ¼ cup whole wheat flour (optional, for texture)
- 2 tbsp sweetener
- 1 tsp baking powder
- Pinch of salt
- 1 egg
- ¼ cup unsweetened almond milk
- 2 tbsp melted butter or coconut oil
Instructions
- Preheat oven to 180°C (350°F).
- Prepare filling:
In a bowl, mix peaches, sweetener, lemon juice, vanilla, cinnamon, and cornstarch.
Pour into a greased baking dish. - Make topping:
Mix almond flour, whole wheat flour, sweetener, baking powder, and salt.
Add egg, almond milk, and melted butter. Stir until a thick batter forms. - Assemble:
Spoon topping over the peaches (don’t worry if it’s uneven—it spreads while baking). - Bake for 30–40 minutes until golden brown and bubbly.
