Minister’s Delight — Diabetic (Sugar-Free) Version


🧾 Ingredients

Fruit Layer

  • 1 cup fresh Strawberry, sliced
  • 1 cup diced Apple
  • ½ cup Pineapple (fresh or unsweetened canned)

Cream Layer

  • 1 cup softened Cream Cheese
  • ½ cup unsweetened Greek Yogurt
  • 3 tbsp monk fruit or erythritol sweetener
  • 1 tsp vanilla extract

Gelatin Layer

  • 1 packet sugar-free Gelatin Dessert (strawberry or raspberry flavor)
  • 1 cup hot water
  • 1 cup cold water

🍳 Instructions

  1. Prepare gelatin
    Dissolve the sugar-free gelatin in hot water, then add cold water. Let it cool slightly.
  2. Make the cream layer
    Beat cream cheese until smooth. Add Greek yogurt, sweetener, and vanilla. Mix until creamy.
  3. Assemble the dessert
    Spread mixed fruit in a glass dish or small cups.
  4. Add cream mixture
    Spoon the cream layer evenly over the fruit.
  5. Pour gelatin layer
    Gently pour cooled gelatin over the top.
  6. Chill
    Refrigerate for 3–4 hours until set.
