Minister’s Delight — Diabetic (Sugar-Free) Version
🧾 Ingredients
Fruit Layer
- 1 cup fresh Strawberry, sliced
- 1 cup diced Apple
- ½ cup Pineapple (fresh or unsweetened canned)
Cream Layer
- 1 cup softened Cream Cheese
- ½ cup unsweetened Greek Yogurt
- 3 tbsp monk fruit or erythritol sweetener
- 1 tsp vanilla extract
Gelatin Layer
- 1 packet sugar-free Gelatin Dessert (strawberry or raspberry flavor)
- 1 cup hot water
- 1 cup cold water
🍳 Instructions
- Prepare gelatin
Dissolve the sugar-free gelatin in hot water, then add cold water. Let it cool slightly. - Make the cream layer
Beat cream cheese until smooth. Add Greek yogurt, sweetener, and vanilla. Mix until creamy. - Assemble the dessert
Spread mixed fruit in a glass dish or small cups. - Add cream mixture
Spoon the cream layer evenly over the fruit. - Pour gelatin layer
Gently pour cooled gelatin over the top. - Chill
Refrigerate for 3–4 hours until set.
