Diabetic-Friendly Honey Lemon Turmeric Gummies
Makes: ~20–25 gummies
Net carbs:
- With honey: ~1–2 g per gummy
- Without honey (stevia/allulose): ~0 g per gummy
Ingredients
- 1 cup water (or unsweetened lemon tea)
- 2 tablespoons fresh lemon juice
- 1 teaspoon ground turmeric
(or 1 tablespoon fresh turmeric, finely grated) - ¼ teaspoon black pepper (IMPORTANT for turmeric absorption)
- 2 tablespoons raw honey (optional – see swaps below)
- 3 tablespoons unflavored gelatin (grass-fed if possible)
Sweetener Options
Choose ONE:
- 2 tbsp raw honey (lowest amount that still tastes good)
- 2–3 tbsp allulose (best blood sugar control)
- Liquid stevia to taste (about 10–15 drops)
Instructions
- Warm the liquid
In a small saucepan, gently heat water and lemon juice over low heat.
Do not boil. - Add turmeric & pepper
Whisk in turmeric and black pepper until fully blended. - Sweeten
Add honey or sugar-free sweetener. Stir until dissolved. - Bloom the gelatin
Remove from heat.
Slowly sprinkle gelatin over the liquid while whisking constantly.
Whisk 1–2 minutes until smooth. - Mold & chill
Pour into silicone gummy molds (or a shallow dish).
Refrigerate 1–2 hours until firm. - Store
Remove gummies and store in an airtight container in the fridge.
