- 1 lb lean ground beef (or ground turkey)

- 1 small onion, chopped

- 4 cups low-sodium beef or vegetable broth
- 1 cup chopped zucchini
- 1 cup chopped green beans
- 1/2 cup diced bell peppers
- 1/2 cup chopped celery
- 1/2 cup chopped cabbage (optional, great low-carb filler)
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- Salt to taste

- Heat olive oil in a pot over medium heat.

- Add ground meat and cook until browned (drain excess fat).
- Stir in tomatoes, broth, and all vegetables.
