🛒 Ingredients (12 muffins)
- 6 large eggs
- ¼ cup unsweetened almond milk (or low-fat milk)
- ½ cup grated cheese (mozzarella or cheddar)
- ½ cup finely diced bell peppers
- ¼ cup finely chopped spinach or parsley
- ¼ cup finely chopped onion (optional)
- ¼ cup diced mushrooms or zucchini
- Salt & black pepper to taste
- ½ tsp garlic powder (optional)
- ½ tsp oregano or mixed herbs
Optional protein boost:
- ¼ cup diced lean turkey/chicken
OR - ¼ cup crumbled paneer/tofu
👩🍳 Instructions
- Preheat oven to 180°C (350°F).
- Lightly grease a muffin tray or use silicone liners.
- In a bowl, whisk eggs and almond milk until fluffy.
- Stir in cheese, veggies, herbs, salt, and pepper.
- Pour mixture evenly into muffin cups (¾ full).
- Bake for 18–22 minutes until set and lightly golden.
- Let cool 5 minutes before removing.
