🛒 Ingredients (12 muffins)

  • 6 large eggs
  • ¼ cup unsweetened almond milk (or low-fat milk)
  • ½ cup grated cheese (mozzarella or cheddar)
  • ½ cup finely diced bell peppers
  • ¼ cup finely chopped spinach or parsley
  • ¼ cup finely chopped onion (optional)
  • ¼ cup diced mushrooms or zucchini
  • Salt & black pepper to taste
  • ½ tsp garlic powder (optional)
  • ½ tsp oregano or mixed herbs

Optional protein boost:

  • ¼ cup diced lean turkey/chicken
    OR
  • ¼ cup crumbled paneer/tofu

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F).
  2. Lightly grease a muffin tray or use silicone liners.
  3. In a bowl, whisk eggs and almond milk until fluffy.
  4. Stir in cheese, veggies, herbs, salt, and pepper.
  5. Pour mixture evenly into muffin cups (¾ full).
  6. Bake for 18–22 minutes until set and lightly golden.
  7. Let cool 5 minutes before removing.
