🥗 Ingredients
- 1–2 boneless chicken breasts (cut into bite-size pieces)
- 2 cups broccoli florets
- 1 medium carrot (sliced thin)
- 1 small bell pepper (optional)
- 2 cloves garlic (minced)
- 1 tbsp fresh ginger (optional)
- 1–2 tbsp olive oil
🍶 Low-Carb Stir-Fry Sauce
- 2 tbsp low-sodium soy sauce (or tamari)
- 1 tbsp oyster sauce (optional, check sugar-free version)
- ½ cup water or chicken broth
- 1 tsp sesame oil
- 1 tsp cornstarch OR xanthan gum (use less for lower carbs)
- ½–1 tsp erythritol/monk fruit (optional, balances flavor)
🔥 Instructions
- Heat oil in a pan or wok.
- Cook chicken until lightly browned; remove and set aside.
- In the same pan, sauté garlic and ginger.
- Add broccoli, carrots, and bell pepper; stir-fry for 3–5 minutes (keep slightly crisp).
- Return chicken to the pan.
- Add sauce mixture and cook until slightly thickened.
- Stir well and cook another 1–2 minutes.
