🥗 Ingredients

  • 1–2 boneless chicken breasts (cut into bite-size pieces)
  • 2 cups broccoli florets
  • 1 medium carrot (sliced thin)
  • 1 small bell pepper (optional)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (optional)
  • 1–2 tbsp olive oil

🍶 Low-Carb Stir-Fry Sauce

  • 2 tbsp low-sodium soy sauce (or tamari)
  • 1 tbsp oyster sauce (optional, check sugar-free version)
  • ½ cup water or chicken broth
  • 1 tsp sesame oil
  • 1 tsp cornstarch OR xanthan gum (use less for lower carbs)
  • ½–1 tsp erythritol/monk fruit (optional, balances flavor)

🔥 Instructions

  1. Heat oil in a pan or wok.
  2. Cook chicken until lightly browned; remove and set aside.
  3. In the same pan, sauté garlic and ginger.
  4. Add broccoli, carrots, and bell pepper; stir-fry for 3–5 minutes (keep slightly crisp).
  5. Return chicken to the pan.
  6. Add sauce mixture and cook until slightly thickened.
  7. Stir well and cook another 1–2 minutes.
