Almond Diabetic Cookies (Low-Carb & Sugar-Free)

✅ Why these are good for diabetics

  • No refined sugar
  • Uses Erythritol or stevia
  • Almond flour = lower glycemic impact than wheat
  • Higher in healthy fats → slower glucose rise

🧾 Ingredients

  • 2 cups almond flour
  • 1/3 cup powdered erythritol (or stevia blend)
  • 1 egg
  • 1/4 cup butter (softened)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F)
  2. Mix almond flour, baking powder, and salt
  3. In another bowl, whisk butter + sweetener until smooth
  4. Add egg and vanilla, mix well
  5. Combine dry + wet ingredients into a dough
  6. Roll into small balls, flatten into cookie shape
  7. Bake for 10–12 minutes until lightly golden
  8. Cool before eating (they firm up as they cool)

🍫 Optional Add-ins

  • Sugar-free dark chocolate chips
  • Chopped almonds or walnuts
  • Cinnamon or coconut flakes
