Denver Omelet Keto Bites

Ingredients:
- 6 large eggs
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced ham
- 1/4 cup diced green bell pepper
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 tsp garlic powder
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Muffin Tin: Spray a 12-cup muffin tin with cooking spray.
- Cook Vegetables: In a skillet over medium heat, sauté the diced green bell pepper, red bell pepper, and onion until they are softened, about 5 minutes. Set aside to cool slightly.
- Mix Eggs and Cream: In a large bowl, whisk together the eggs and heavy cream until well combined.
- Add Cheese and Ham: Stir in the shredded cheddar cheese, diced ham, sautéed vegetables, garlic powder, salt, and pepper.
- Fill Muffin Cups: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake: Bake in the preheated oven for 18-20 minutes, or until the eggs are set and the tops are slightly golden.
- Cool and Serve: Allow the bites to cool in the muffin tin for a few minutes before removing them. Serve warm.
