Denver Omelet Keto Bites

Ingredients:

  • 6 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced ham
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Muffin Tin: Spray a 12-cup muffin tin with cooking spray.
  3. Cook Vegetables: In a skillet over medium heat, sauté the diced green bell pepper, red bell pepper, and onion until they are softened, about 5 minutes. Set aside to cool slightly.
  4. Mix Eggs and Cream: In a large bowl, whisk together the eggs and heavy cream until well combined.
  5. Add Cheese and Ham: Stir in the shredded cheddar cheese, diced ham, sautéed vegetables, garlic powder, salt, and pepper.
  6. Fill Muffin Cups: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake: Bake in the preheated oven for 18-20 minutes, or until the eggs are set and the tops are slightly golden.
  8. Cool and Serve: Allow the bites to cool in the muffin tin for a few minutes before removing them. Serve warm.

Tips:

  • Storage: These bites can be stored in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 20-30 seconds before serving.
