DARK CHOCOLATE BANANA PROTEIN MUFFINS
Each one is 115 calories and packs 9 grams of protein. They are low in fat too, not because fat is bad, but because I made these specifically for a pre-run snack. Unless you want to learn the hard way, just avoid fat pre-exercise! Trust me. Not to worry though, the low fat content doesn’t mean dry muffins, thanks to the bananas.
First, go to Target and stock up on the new Kodiak mixes, then give this recipe a try. It’ll be the best thing you do all week.
INGREDIENTS
- 2 cups Dark Chocolate Kodiak Cakes mix
- 1 scoop unflavored protein powder (I use whey)
- 3 bananas, mashed well
- 3/4 cup milk of choice
- 1 cup nonfat, plain Greek yogurt
DIRECTIONS
Preheat oven to 350F and line a muffin pan or grease well.
In a large bowl, combine Dark Chocolate mix, protein, bananas, milk, and Greek yogurt. Mix well.
Spoon batter into each cup until ~3/4 full.
Bake for 20-25 minutes, or until inserted toothpick comes out clean.
