Diabetic Cucumber & Tomato Salad

🧾 Ingredients (Serves 4)

  • 2 cups chopped fresh tomatoes
  • 2 cups sliced cucumber (English or regular, seeds removed if watery)
  • ¼ cup thinly sliced red onion
  • 1 tbsp olive oil
  • 1–2 tbsp fresh lemon juice or red wine vinegar
  • 1 tbsp chopped fresh parsley or dill
  • Salt & black pepper to taste

👩‍🍳 Instructions

  1. In a large bowl, combine tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk olive oil, lemon juice (or vinegar), salt, and pepper.
  3. Pour dressing over vegetables and toss gently.
  4. Chill 20–30 minutes before serving for best flavor.
