Cucumber and Cabbage Salad

Ingredients:

  • 1 medium cucumber, thinly sliced
  • 1 small cabbage, shredded
  • 1 small red onion, thinly sliced (optional)
  • 1-2 tablespoons olive oil
  • 1 tablespoon lemon juice or apple cider vinegar
  • Salt and pepper to taste
  • A pinch of dried herbs (optional: oregano or dill for extra flavor)
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. Prepare the Vegetables: Slice the cucumber into thin rounds or half-moons, depending on your preference. Shred the cabbage finely and slice the onion (if using).
  2. Mix Ingredients: In a large bowl, combine the cucumber, cabbage, and onion. Toss everything gently.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice or vinegar, salt, pepper, and any herbs you’re using. Taste and adjust seasoning if necessary.
  4. Toss and Serve: Pour the dressing over the vegetables and toss to combine. Let the salad sit for a few minutes to allow the flavors to meld.
  5. Garnish: Sprinkle fresh parsley or cilantro on top for a burst of color and added flavor.

Optional Add-ins:

  • Add a handful of chopped tomatoes, bell peppers, or avocado for more texture and flavor.
  • If you prefer a slightly sweeter salad, add a teaspoon of honey or a few chopped dates
