Cucumber and Cabbage Salad

Ingredients:
- 1 medium cucumber, thinly sliced
- 1 small cabbage, shredded
- 1 small red onion, thinly sliced (optional)
- 1-2 tablespoons olive oil
- 1 tablespoon lemon juice or apple cider vinegar
- Salt and pepper to taste
- A pinch of dried herbs (optional: oregano or dill for extra flavor)
- Fresh parsley or cilantro for garnish (optional)
Instructions:
- Prepare the Vegetables: Slice the cucumber into thin rounds or half-moons, depending on your preference. Shred the cabbage finely and slice the onion (if using).
- Mix Ingredients: In a large bowl, combine the cucumber, cabbage, and onion. Toss everything gently.
- Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice or vinegar, salt, pepper, and any herbs you’re using. Taste and adjust seasoning if necessary.
- Toss and Serve: Pour the dressing over the vegetables and toss to combine. Let the salad sit for a few minutes to allow the flavors to meld.
- Garnish: Sprinkle fresh parsley or cilantro on top for a burst of color and added flavor.
Optional Add-ins:
- Add a handful of chopped tomatoes, bell peppers, or avocado for more texture and flavor.
