Crock Pot Chicken & Broccoli

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cups broccoli florets
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

Instructions:

  1. Place the chicken pieces, broccoli, and chopped onion in the slow cooker.
  2. In a small bowl, mix together the minced garlic, chicken broth, soy sauce, hoisin sauce, sesame oil, ground ginger, salt, and pepper.
  3. Pour the sauce over the chicken and broccoli in the slow cooker.
  4. Stir the ingredients in the slow cooker to ensure the chicken and broccoli are well coated with the sauce.
  5. Cover the slow cooker and cook on low for 4-6 hours or until the chicken is cooked through and the broccoli is tender.
  6. Before serving, taste the mixture and adjust seasoning if necessary.
