🥕 Ingredients:
50g carrot, peeled and grated
1 medium zucchini, grated
1/2 small onion, finely chopped (about 50g)
1 tbsp ground flaxseed + 2.5 tbsp water (flax egg replacement)
100ml plant-based milk (soy, oat, or almond all work)
1/2 tsp salt
1/4 tsp black pepper
100g (about 2/3 cup) all-purpose flour (can sub gluten-free if needed)
Vegan cheddar cheese, shredded (as much as your heart desires!)
🔪 Directions:
Preheat your oven to 180°C (350°F) and lightly grease a baking dish or line it with parchment paper.
In a small bowl, mix the ground flaxseed and water to make your flax egg. Let it sit for a few minutes to thicken.
In a large mixing bowl, combine the grated zucchini, carrot, and onion.
In another bowl, whisk together the plant milk, flax egg, salt, and pepper.
Slowly stir the flour into the wet mixture until just combined. No need to overmix!
Pour the batter over your veggie mix and stir everything together until fully coated.
Spread the mixture evenly into the prepared baking dish. Sprinkle with a generous layer of vegan cheddar on top.
Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let it cool slightly, slice into squares, and dig in while it’s warm and melty!
