Crispy Potato & Cheese Bombs with Garlic Butter

Ingredients:
- 2 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 4 tablespoons butter
- 2 cloves garlic, minced
- Salt and pepper to taste
Directions:
- Preheat oven to 400°F (200°C) and grease a baking sheet.
- Boil the diced potatoes until tender, then mash them in a bowl.
- Stir in cheddar cheese, Parmesan cheese, and parsley. Season with salt and pepper.
- Shape the mixture into small balls and place them on the baking sheet.
- In a small saucepan, melt butter and sauté garlic until fragrant.
- Brush the potato balls with the garlic butter mixture.
- Bake for 20-25 minutes or until golden and crispy.
