Crispy Parmesan Zucchini Rounds (Diabetic-Friendly)

🧾 Ingredients (Serves 4)

  • 2 medium zucchini, sliced into ¼-inch rounds
  • ½ cup grated Parmesan cheese
  • ½ cup almond flour
  • 1 tsp garlic powder
  • ½ tsp Italian seasoning
  • 1 egg, beaten
  • Salt & black pepper to taste
  • Olive oil spray

👩‍🍳 Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Set up coating bowls:
    • Bowl 1: beaten egg
    • Bowl 2: mix Parmesan, almond flour, garlic powder, Italian seasoning, salt & pepper
  3. Dip each zucchini slice into egg, then press into Parmesan mixture.
  4. Place on baking sheet in a single layer. Lightly spray tops with olive oil.
  5. Bake 18–22 minutes, flipping halfway, until golden and crispy.
  6. Broil 1–2 minutes at the end for extra crispness (watch carefully).
