Crispy Parmesan Zucchini Rounds (Diabetic-Friendly)
🧾 Ingredients (Serves 4)
- 2 medium zucchini, sliced into ¼-inch rounds
- ½ cup grated Parmesan cheese
- ½ cup almond flour
- 1 tsp garlic powder
- ½ tsp Italian seasoning
- 1 egg, beaten
- Salt & black pepper to taste
- Olive oil spray
👩🍳 Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Set up coating bowls:
- Bowl 1: beaten egg
- Bowl 2: mix Parmesan, almond flour, garlic powder, Italian seasoning, salt & pepper
- Dip each zucchini slice into egg, then press into Parmesan mixture.
- Place on baking sheet in a single layer. Lightly spray tops with olive oil.
- Bake 18–22 minutes, flipping halfway, until golden and crispy.
- Broil 1–2 minutes at the end for extra crispness (watch carefully).
