  • 1/2 lb (225g) ground beef
  • 1/2 small onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp mayonnaise (optional, for extra creaminess)
  • Salt & black pepper, to taste
  • 1/4 tsp garlic powder (optional)
  • 10–12 egg roll wrappers
  • Oil, for frying (vegetable, canola, or peanut oil)

Optional Add-ins:

  • Pickles, finely chopped
  • Bacon bits
  • Hot sauce or smoked paprika for a kick

1. Cook the filling:

  • In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft (about 5–7 minutes).
  • Drain excess grease.
  • Stir in ketchup, mustard, mayo (if using), garlic powder, and season with salt & pepper.
  • Remove from heat and let cool slightly.
  • Once cooled, mix in shredded cheddar (and pickles or bacon, if using).

2. Assemble the egg rolls:

  • Lay out an egg roll wrapper with one corner pointing toward you.
  • Place 2–3 tablespoons of filling in the center.
  • Fold the bottom corner over the filling, then fold in the sides and roll tightly.
  • Seal the edge with a bit of water.

3. Fry until crispy:

  • Heat oil in a deep skillet or pot to 350Β°F (175Β°C).
  • Fry egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy.
  • Transfer to a paper towel–lined plate to drain.
