Ingredients
- 1 can (20 oz) crushed pineapple, well drained
(very important to drain well) - 1 cup plain Greek yogurt (nonfat or full-fat)
- ½ cup cottage cheese, blended smooth
- ¼–⅓ cup honey or maple syrup (adjust to taste)
- 1 tsp vanilla extract
- Optional: ½ tsp lemon juice (brightens flavor)

- Toasted coconut flakes
- Chopped nuts (pecans or walnuts)
- Mini vanilla protein powder scoop (unflavored or vanilla)
- Graham cracker crumbs for topping
Instructions
- Blend cottage cheese
Blend cottage cheese until completely smooth and creamy. - Mix base
In a bowl, combine Greek yogurt, blended cottage cheese, honey, vanilla, and lemon juice. - Fold in pineapple
Gently fold in the drained crushed pineapple. - Chill
Refrigerate for at least 1 hour to thicken and let flavors meld. - Serve
