Ingredients

  • 1 can (20 oz) crushed pineapple, well drained
    (very important to drain well)
  • 1 cup plain Greek yogurt (nonfat or full-fat)
  • ½ cup cottage cheese, blended smooth
  • ¼–⅓ cup honey or maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • Optional: ½ tsp lemon juice (brightens flavor)

Optional Add-Ins

  • Toasted coconut flakes
  • Chopped nuts (pecans or walnuts)
  • Mini vanilla protein powder scoop (unflavored or vanilla)
  • Graham cracker crumbs for topping

Instructions

  1. Blend cottage cheese
    Blend cottage cheese until completely smooth and creamy.
  2. Mix base
    In a bowl, combine Greek yogurt, blended cottage cheese, honey, vanilla, and lemon juice.
  3. Fold in pineapple
    Gently fold in the drained crushed pineapple.
  4. Chill
    Refrigerate for at least 1 hour to thicken and let flavors meld.
  5. Serve
    Spoon into bowls or cups and add toppings if desired.
