Creamy Garlic Mushroom Salmon

π§ππ Creamy Garlic Mushroom Salmon
π Ingredients:
For the Salmon:
- 4 salmon fillets (skin-on or off)
- Salt & pepper to taste
- 1 tbsp olive oil
- 1 tbsp butter
For the Sauce:
- 1 tbsp butter
- 3β4 cloves garlic, minced
- 8 oz mushrooms, sliced (cremini or button work great)
- Β½ cup chicken broth (or dry white wine)
- 1 cup heavy cream (or half & half for lighter version)
- ΒΌ cup grated Parmesan cheese
- 1 tsp fresh thyme (or Β½ tsp dried)
- 1 tbsp lemon juice
- Salt & pepper to taste
- Fresh parsley or chives (for garnish)

π©βπ³ Instructions:
- Sear the Salmon:
- Pat salmon dry. Season with salt and pepper.
- Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
- Sear salmon for 4β5 minutes per side until golden and just cooked through. Remove and set aside.
- SautΓ© the Mushrooms:
- In the same skillet, add 1 tbsp butter. SautΓ© mushrooms for 4β5 minutes until browned and softened.
- Add garlic and cook for another 30 seconds until fragrant.
- Deglaze & Simmer:
- Pour in chicken broth (or wine), scraping up any bits from the pan. Simmer 2β3 minutes to reduce slightly.
- Add Cream & Cheese:
- Stir in heavy cream, Parmesan, thyme, and lemon juice.
- Simmer for 3β4 minutes until sauce thickens slightly. Season with salt and pepper to taste.
- Finish with Salmon:
- Return salmon fillets to the skillet. Spoon sauce and mushrooms over the top.
- Simmer another 1β2 minutes to heat through.
- Serve:
- Garnish with fresh parsley or chives.
- Serve with mashed potatoes, rice, pasta, or crusty bread.
