Creamy Garlic Butter Salmon Pasta

🧺 Ingredients:
For the salmon:
- 2 salmon fillets (skinless)
- Salt & pepper, to taste
- 1 tbsp olive oil or butter
For the sauce:
- 2 tbsp butter
- 4–5 garlic cloves (minced)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp chili flakes (optional)
- Salt & pepper, to taste
- 1/2 tsp Italian seasoning (or oregano)
For the pasta:
- 1 packet keto pasta (like shirataki noodles or palmini)
- OR use zucchini noodles (zoodles) for a veggie base!
Optional:
- Fresh parsley or basil (for garnish)
- A squeeze of lemon
🔪 Instructions:
- Cook the salmon:
- Season salmon with salt and pepper.
- Heat olive oil/butter in a pan and sear salmon 3–4 mins each side until golden and cooked through. Remove and set aside.
- Make the creamy garlic butter sauce:
- In the same pan, melt 2 tbsp butter.
- Add minced garlic and sauté until fragrant (about 30 seconds).
- Pour in heavy cream and bring to a light simmer.
- Stir in Parmesan cheese, chili flakes, Italian seasoning, salt, and pepper. Let it simmer until it thickens (3–5 mins).
- Add salmon & pasta:
- Flake salmon into large chunks and add back to the pan.
- Toss in your keto pasta/zoodles and mix gently to coat everything in the creamy sauce.
- Serve hot:
- Garnish with fresh parsley and a squeeze of lemon for extra freshness.
