Main:
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- Β½ cucumber, diced
- ΒΌ red onion, finely sliced (optional)
- ΒΌ cup fresh cilantro or parsley, chopped
- 1 cup romaine or baby spinach (optional for more greens)
- Β½ cup corn kernels (fresh, canned, or grilled β optional)
Creamy Dressing:
- 3 tbsp plain Greek yogurt or sour cream
- 1 tbsp mayonnaise (optional for extra richness)
- 1 tbsp fresh lime or lemon juice
- 1 tsp olive oil
- 1 small garlic clove, minced or grated
- Salt and black pepper to taste

- Prep the Dressing:
- In a small bowl, whisk together the Greek yogurt, lime juice, olive oil, garlic, salt, and pepper.
- Add mayonnaise if using. Mix until smooth and creamy. Adjust seasoning to taste.
