Creamed peas and potatoes

Ingredients:

  • 2 cups baby potatoes (quartered or halved if large)
  • 1 ½ cups fresh or frozen green peas
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or almond flour for keto)
  • 1 cup milk (or heavy cream for a creamier texture)
  • ½ cup chicken or vegetable broth
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish (optional)

Instructions:

  1. Boil the Potatoes
    In a medium pot, boil the potatoes in salted water until tender (about 10-12 minutes). Drain and set aside.
  2. Prepare the Sauce
    In a large skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux. Gradually whisk in the milk and broth until smooth and thickened.
  3. Add Seasoning and Peas
    Stir in the garlic powder, salt, and pepper. Add the peas and cook for 3-5 minutes (until tender if using fresh peas).
  4. Combine with Potatoes
    Gently fold in the cooked potatoes until everything is well coated with the creamy sauce.
  5. Garnish and Serve
    Sprinkle with fresh parsley or dill, if desired. Serve warm.

Serving Suggestion:

This comforting dish is perfect as a side for grilled meats or can be enjoyed on its own for a simple, hearty meal.
