Crab Stuffed Cheddar Bay Biscuits with Lemon Butter

Ingredients:

For the Biscuits:

  • 2 cups almond flour
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup unsweetened almond milk (or any low-carb milk)
  • Salt and pepper to taste

For the Crab Filling:

  • 1/2 lb lump crab meat, drained and patted dry
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste

For the Lemon Butter:

  • 1/4 cup unsalted butter, melted
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon garlic powder
  • A pinch of salt

Instructions:

For the Biscuits:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, shredded cheddar cheese, Parmesan, baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. In another bowl, whisk the eggs, melted butter, and almond milk together.
  4. Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Scoop about 2 tablespoons of the biscuit dough and form into small rounds. Flatten them slightly on the baking sheet.
  6. Use your finger or a spoon to make an indentation in the center of each biscuit to create space for the crab filling.

For the Crab Filling:

  1. In a bowl, gently mix together the crab meat, cream cheese, mozzarella, mayonnaise, garlic powder, Dijon mustard, salt, and pepper until just combined.
  2. Scoop a generous amount of the crab mixture into the center of each biscuit.

Baking:

  1. Bake the biscuits in the preheated oven for 18-20 minutes or until the biscuits are golden brown and cooked through.

For the Lemon Butter:

  1. In a small bowl, combine the melted butter, lemon juice, lemon zest, garlic powder, and salt. Stir to mix well.
  2. Once the biscuits are done baking, drizzle the lemon butter over the hot biscuits.
