🥣 Ingredients (4 servings)
- ½ lb shrimp, peeled & chopped
- ½ lb lump crab meat (fresh or canned, drained)
- 1 tbsp olive oil or butter
- ¼ cup finely diced onion
- 2 cloves garlic, minced
- ¼ cup finely diced celery
- ½ cup cauliflower florets (natural thickener)
- 3 cups low-sodium seafood or chicken broth
- ½ cup unsweetened almond milk or light cream
- ¼ tsp smoked paprika
- ¼ tsp Old Bay seasoning (optional)
- Salt & black pepper to taste
- 1 tbsp tomato paste (optional, small amount for flavor)
- Fresh parsley for garnish
👩🍳 Instructions
- Sauté aromatics:
Heat oil in a pot. Add onion, celery, and garlic. Cook 3–4 minutes. - Add cauliflower & broth:
Simmer 12–15 minutes until cauliflower is very soft. - Blend:
Blend until smooth and creamy. - Add seafood:
Return to low heat. Add shrimp, cook 3–4 minutes.
Gently fold in crab meat. - Finish:
Stir in almond milk/light cream, seasonings, and tomato paste (if using). Simmer 2–3 minutes. Do not boil. - Serve warm, garnish with parsley.
