Crab and Shrimp Seafood Bisque

Ingredients:

  • 1 tbsp butter
  • 1 tbsp olive oil
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • ½ cup cream cheese, softened
  • ½ tsp Old Bay seasoning (or to taste)
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper (optional, for a little heat)
  • ½ cup cooked shrimp, chopped
  • ½ cup lump crab meat
  • 1 tbsp tomato paste
  • Salt & pepper to taste
  • Fresh parsley or chives for garnish

Instructions:

  1. Heat butter and olive oil in a pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Stir in tomato paste, Old Bay, smoked paprika, and cayenne. Cook for another minute.
  3. Pour in broth and bring to a simmer. Add cream cheese and whisk until smooth.
  4. Stir in heavy cream and let it gently simmer for 5 minutes.
  5. Add the shrimp and crab meat, cooking just until heated through.
  6. Season with salt and pepper, then serve hot, garnished with fresh herbs.
