COWBOY COOKIES
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened shredded coconut
- 1/2 cup sugar-free chocolate chips
- 1/2 cup chopped pecans or walnuts
- 1/3 cup erythritol or another keto-friendly sweetener
- 1/4 cup butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the almond flour, coconut flour, shredded coconut, sugar-free chocolate chips, chopped nuts, erythritol, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Use a cookie scoop or your hands to form the dough into balls, then place them onto the prepared baking sheet. Flatten each ball slightly with your hand or the back of a spoon.
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
