Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix together the almond flour, coconut flour, shredded coconut, sugar-free chocolate chips, chopped nuts, erythritol, baking powder, and salt.
In a separate bowl, whisk together the melted butter, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until a dough forms.
Use a cookie scoop or your hands to form the dough into balls, then place them onto the prepared baking sheet. Flatten each ball slightly with your hand or the back of a spoon.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
