Cottage Cheese and Veggies Bake
Ingredients
Cottage Cheese Mixture
- 1.5 cups cottage cheese
- 2 eggs
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Vegetables
- 1 zucchini diced
- 1 red bell pepper chopped
- 1 cup broccoli florets chopped
- 1 carrot small, grated
- 0.5 red onion finely chopped
- 2 cloves garlic minced
- 0.5 teaspoon dried oregano optional
- 0.25 cup Parmesan or cheddar cheese grated, optional, for topping
- 1 Cooking spray or olive oil for greasing the baking dish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.
- In a large bowl, combine cottage cheese, eggs, salt, and pepper.
- Add the diced zucchini, chopped red bell pepper, chopped broccoli florets, grated carrot, finely chopped red onion, and minced garlic to the bowl.
- Stir in the dried oregano, if using.
- Pour the mixture into the prepared baking dish.
- If desired, sprinkle the top with grated Parmesan or cheddar cheese.
- Bake for 30-35 minutes, or until the bake is set and lightly golden brown.
- Let cool slightly before serving.
Notes
This recipe can be easily adapted to include other vegetables you enjoy. Feel free to experiment with different herbs and spices as well.
