Ingredients
- ½ cup coconut flour
- 6 eggs (room temperature)
- ¼ cup butter (melted) or coconut oil
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp apple cider vinegar
- ¼ cup warm water or almond milk
- Optional:
- 1 tbsp psyllium husk powder (bread-like texture)
- Sesame seeds or flax for topping
🔪 Method
- Preheat oven to 170°C / 340°F. Line a loaf pan.
- In a bowl, whisk eggs, butter, and vinegar well.
- Add coconut flour, baking powder & salt. Mix.
- Add warm water slowly — batter will thicken.
- Fold in psyllium husk if using.
- Pour batter into pan, smooth top.
- Sprinkle seeds if you like.
- Bake 40–45 minutes until golden and firm.
- Cool completely before slicing (important!).
