Ingredients:

- 2 tbsp fresh dill, chopped (or 1 tsp dried)
- ΒΌ cup white vinegar (or apple cider vinegar)
- 1 tbsp olive oil (optional for a richer dressing)
- 1β2 tsp sugar (adjust to taste)
- Salt and pepper, to taste
Instructions:
- Prep the cucumbers:
- Thinly slice cucumbers (use a mandoline for uniform slices).
- Optional: If using standard cucumbers, peel and scoop out seeds before slicing.
- Make the dressing:
- In a small bowl, whisk together vinegar, sugar, salt, pepper, and olive oil (if using).
- Stir in chopped dill.
- Assemble the salad:
- In a large bowl, combine cucumbers and red onion.
- Pour dressing over and toss gently to coat.
- Chill (optional but recommended):
- Let sit in the fridge for 15β30 minutes to allow flavors to meld.
- Taste and adjust seasoning before serving.
