Ingredients:

  • 2 large cucumbers, thinly sliced (English or Persian work best)
  • ΒΌ red onion, very thinly sliced (optional)
  • 2 tbsp fresh dill, chopped (or 1 tsp dried)
  • ΒΌ cup white vinegar (or apple cider vinegar)
  • 1 tbsp olive oil (optional for a richer dressing)
  • 1–2 tsp sugar (adjust to taste)
  • Salt and pepper, to taste

Instructions:

  1. Prep the cucumbers:
    • Thinly slice cucumbers (use a mandoline for uniform slices).
    • Optional: If using standard cucumbers, peel and scoop out seeds before slicing.
  2. Make the dressing:
    • In a small bowl, whisk together vinegar, sugar, salt, pepper, and olive oil (if using).
    • Stir in chopped dill.
  3. Assemble the salad:
    • In a large bowl, combine cucumbers and red onion.
    • Pour dressing over and toss gently to coat.
  4. Chill (optional but recommended):
    • Let sit in the fridge for 15–30 minutes to allow flavors to meld.
    • Taste and adjust seasoning before serving.
