Cinnamon Swirl Apple Fritter Bread

Ingredients:

For the Bread:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened applesauce
  • ½ cup milk
  • 1 tablespoon vegetable oil

For the Cinnamon Swirl:

  • ½ cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, melted

For the Apple Fritter Layer:

  • 1 apple, peeled, cored, and diced (Granny Smith or Honeycrisp work well)
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×5-inch loaf pan.
  2. Make the Cinnamon Swirl:
    • In a small bowl, mix together the brown sugar and cinnamon.
    • Stir in the melted butter. Set this aside.
  3. Prepare the Apple Fritter Layer:
    • In a small bowl, toss the diced apple with lemon juice and brown sugar. Set aside.
  4. Make the Bread Batter:
    • In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
    • In another bowl, whisk the eggs, granulated sugar, vanilla extract, applesauce, milk, and vegetable oil.
    • Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Layer the Bread:
    • Pour half of the batter into the prepared loaf pan.
    • Spread a layer of the cinnamon swirl mixture over the batter.
    • Add half of the apple fritter mixture on top.
    • Pour the remaining batter on top, then sprinkle the remaining cinnamon swirl mixture and apple fritter layer over it.
  6. Swirl the Batter:
    • Using a knife or toothpick, swirl the cinnamon and apple mixture into the batter. Be gentle, so you don’t fully mix it.
  7. Bake:
    • Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Glaze the Bread:
    • While the bread is cooling, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
    • Once the bread has cooled for 10-15 minutes, drizzle the glaze over the top.
  9. Serve:
    • Allow the glaze to set, then slice and enjoy the Cinnamon Swirl Apple Fritter Bread!
