Low-Carb Cinnamon Bread (Diabetic-Friendly)

Dry Ingredients:

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • Β½ tsp baking soda
  • Β½ tsp salt
  • 1 tsp ground cinnamon

Wet Ingredients:

  • 3 large eggs (room temperature)
  • β…“ cup unsweetened almond milk
  • ΒΌ cup melted coconut oil or unsalted butter
  • Β½ cup granulated monk fruit sweetener or erythritol
  • 1 tsp vanilla extract

Cinnamon Swirl:

  • 2 tbsp granulated monk fruit sweetener
  • 1 tbsp ground cinnamon

  1. Preheat oven to 350Β°F (175Β°C). Line a loaf pan with parchment paper.
  2. In a bowl, whisk together almond flour, coconut flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk eggs, almond milk, melted oil/butter, sweetener, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Pour half the batter into the loaf pan.
  6. Mix swirl ingredients (sweetener + cinnamon) and sprinkle half over batter.
  7. Add remaining batter, then top with remaining cinnamon mixture. Swirl gently with a knife.
  8. Bake 40–50 minutes, or until a toothpick comes out clean.
  9. Cool completely before slicing.
