Chickpea Salad

Ingredients:

  • 2 cans of chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced (any color you prefer)
  • 1 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the drained and rinsed chickpeas, diced cucumber, diced bell pepper, chopped red onion, halved cherry tomatoes, and chopped parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.
  3. Pour the dressing over the chickpea mixture and toss until everything is evenly coated.
  4. Taste and adjust seasoning if necessary.
  5. Serve immediately or refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
