Chickpea Salad

Ingredients:
- 2 cans of chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 bell pepper, diced (any color you prefer)
- 1 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the drained and rinsed chickpeas, diced cucumber, diced bell pepper, chopped red onion, halved cherry tomatoes, and chopped parsley.
- In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.
- Pour the dressing over the chickpea mixture and toss until everything is evenly coated.
- Taste and adjust seasoning if necessary.
- Serve immediately or refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
