🥪 Chicken Parmesan Grilled Cheese Sandwich

🍗 Ingredients (for 2 sandwiches):

  • 4 slices sourdough or Italian bread
  • 1 cup cooked chicken (breaded or grilled, shredded or sliced)
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp butter (softened)
  • Optional: 1 garlic clove (for rubbing the bread), red pepper flakes for heat

🔥 Instructions:

  1. Prep the Bread
    • Butter one side of each bread slice.
    • (Optional: Rub the unbuttered side with a cut garlic clove for extra flavor.)
  2. Assemble the Sandwiches
    • On the unbuttered side, layer in order:
      • Shredded or sliced cooked chicken
      • A spoonful of marinara sauce
      • A sprinkle of Italian seasoning
      • A layer of mozzarella cheese
      • A bit of Parmesan cheese
  3. Grill It
    • Heat a skillet over medium heat.
    • Place sandwiches in the pan, buttered side down.
    • Grill for 3–4 minutes per side, pressing slightly with a spatula, until golden brown and cheese is melted.
  4. Serve
    • Slice in half and serve hot with extra marinara on the side for dipping.

🍽️ Tips & Variations:

  • Use breaded chicken cutlets or leftover rotisserie chicken for convenience.
  • Add a layer of fresh basil or a sprinkle of red pepper flakes if you like heat.
  • Substitute provolone or fontina cheese for a more gourmet flavor.
