Chicken Parm
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1 cup marinara sauce (look for a low-point option)
- 1 cup part-skim mozzarella cheese, shredded
- Fresh basil for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt and pepper.
- In one shallow bowl, combine breadcrumbs and Parmesan cheese. In another bowl, place beaten eggs.
- Dip each chicken breast into the beaten eggs, then into the breadcrumb mixture, making sure to coat the chicken evenly.
- Place the coated chicken breasts on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the coating is golden brown.
- Remove the chicken from the oven and spoon marinara sauce over each breast.
- Sprinkle mozzarella cheese over the top.
- Return the chicken to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil if desired.
