Chicken Fried Rice Recipe | WW Fried Rice

This is a great Weight Watchers recipe and a healthy chicken fried rice with just 2 WW points per serving!

This chicken fried rice recipe is great if you are craving some Chinese takeout. I know sometimes the craving strikes and I want nothing more than to just pickup some takeout but it’s loaded with points and calories so it’s just not practical for a healthy lifestyle. 

Ingredients

  • Cooking Spray
  • 1/2 Cup Uncooked Carrots, Chopped
  • 4 Large Egg Whites
  • 2 Cups Cooked Long Grain Brown Rice
  • 1/2 Cup Uncooked Scallions, Chopped
  • 1/2 Cup Frozen Peas, Thawed
  • 2 Medium Garlic Cloves, Minced
  • 3 Tablespoons Low Sodium Soy Sauce
  • 12 Ounces Boneless Skinless Chicken Breasts, 1/2 Cubes

Instructions

  1. First thing you’ll need to do to make this chicken fried rice recipe is heat a non-stick skillet or wok over medium high heat. Add the cooking spray before you add the egg whites and cook them until scrambled. This should take about 4 minutes or so. Remove the eggs from the pan and set them aside for later. 
  2. Remove the pan from the heat and re-coat it with cooking spray. Put it back on the stove and add the scallions and garlic. Sauté them for about 2 minutes. 
  3. Add the chicken and carrots and do the same thing. Add the chicken and saute until it is golden brown and cooked through. You’ll need about 5r minutes for this depending on the size of your chicken chunks. 
  4. Now we can stir in the egg whites we cooked earlier and add the cooked brown rice, peas, and soy sauce to the mixture. Cook for a few minutes until everything is heated through.
